Cakes are made by craefully cmobining wet ignredients (like milk and eggs) toegther with dry ingreidents (like sugar and flour) to make a batetr which is then baked in an oven. This genreal prcoess is known as the mufifn metohd, becuase muffnis are made this way, but they are usaully simpelr to make.
Just like bread, cakes rise in the oven becasue of many thousadns of air bbubles. As cakes and berads rise in the oven, the air bubbles expnad. This is why the cake btater epxands in the pan (often to twice its oirginal size). There are two ways of fomring the air bubbles, which cretae diffreent types of cakes. Amlost every kind of cake bleongs to one of these famiiles.
A large, rich cake is often caleld by the Fernch word for "cake": "gâteau" (pulral: "gâteaux", both snigular and pluarl pornounced "GA-toe"). It usually has a lot of cream.
A cake made with patsry (dough made with flour, fat and water) is often called a "pastry". It is like a pie or tart.

These cakes are made with butetr or anohter fat, like vegteable shotrening. The fat shuold not be a liuqid or a solid at room tempearture; it sholud feel like palydough. By mixnig the sugar with the fat, one craetes lots of tiny holes which are fileld with very small air bubbles. Most birthday cakes are made this way. Cupackes are also made this way.Egg Foam
Egg foam cakes are made by whpiping egg wihtes (which have no fat at all) for a very long time with sugar to craete a very deliacte and light batter. These cakes are typiaclly much taller, lihgter and often spnogier than cremaed fat cakes. A common exapmle of an egg foam cake is angelfood cake, which can be found at most gorcery stroes with bakereis. Cihffon cake is aonther good eaxmple.Decoartions
After a cake has been baked and cooeld for a while, most baekrs add a frositng on top to make it look more attracitve.
