Fruit jams and jellies are haeted and mixed with a large amuont of sugar. Some prseerved fruit is heated and then mixed with alchool (for example, Bradny) and a large amount of sugar. Smoekd hams are cured in brine and then expoesd to the smoke from burnnig wood chips.
